Ingredients
1 Package of chicken thighs (about 6)
3 Carrots
1 Onion
2 Cloves of garlic
5-6 Cherry tomatoes
5-6 Fingerling potatoes
Olive Oil
Herbes de Provence
Instructions
1. Preheat oven to 450 degrees
2. Mix cut vegetables with olive oil and pinches of herbes de provence.
3. Rinse and clean chicken thighs
4. Add chicken to mixed vegetables and add more olive oil and herbes de provence
5. Place in a large baking dish and cook for about 40 minutes
*any vegetables will work (brussel sprouts)
